ONE POT SPICY SAUSAGE & BABY KALE FETTUCCINE

Ingredients

  • 1 large shallot
  • 3 cloves garlic
  • 1 package of sausage of choice
  • 1 tbsp Italian seasoning
  • 3 tbsp avocado oil
  • 2 cups baby kale
  • juice or one lemon
  • 1 package sliced white mushrooms
  • crushed red pepper to taste
  • pasta of choice (I used @capellos fettuccine)

Instructions

  • Slice shallots, mushrooms, sausage, and set aside.
  • In a large pot on the stove, boil pasta according to package instructions.
  • Once pasta is done, rinse and transfer to another bowl.
  • Using the same pot, place over medium heat and add oil.
  • Once hot, add the sausage and shallots and garlic (using a garlic masher).
  • Stir for about 3-4 minutes, then add mushrooms, Italian seasoning and red pepper flakes (if using).
  • Stir for another 5 minutes and add baby kale and lemon juice.
  • The kale will slowly wilt.
  • Add pasta back in the pot and coat everything well!
