PALEO SWEET POTATO BAKE

Ingredients

  • 4 large sweet potatoes
  • ½ cup diced onion
  • 1 sprig fresh rosemary, chopped
  • ¼ cup 1/4 chopped pecans
  • 1 8 oz bottle Primal Kitchen Greek Dressing (use any dressing of choice! Also highly recommend bbq sauce)
  • Salt & pepper to taste

Instructions

  • Preheat oven to 400.
  • Scrub sweet potatoes.
  • Slice thinly with a mandolin (you can get an inexpensive one on amazon).
  • Spray an 8x8 baking dish generously with avocado/coconut oil.
  • Line up the sweet potatoes like dominos and make sure to pack them together right.
  • Dice onions and start placing them in between the sweet potatoes.
  • Pour dressing of choice evenly over the sweet potatoes.
  • Bake for 40 minutes.
  • Remove from oven.
  • Sprinkle with chopped rosemary, pecans, salt and pepper!
