In a large pot, add olive oil over medium heat.
Add onion and mashed garlic.
Stir for a few minutes, until the onion starts to soften. add tomato paste and quinoa and stir for another minute. Add black beans and veggie broth.
Bring to a gentle boil, then cover and reduce heat to low.
Set timer for 20 minutes.
Turn heat off and fluff the quinoa.
Squeeze lime over the quinoa.
Serve and add toppings of choice.
