Vegan Taco Quinoa

VEGAN TACO QUINOA - INGREDIENTS1 1/2 cups drained and rinsed quinoa2 1/4 cups vegetable broth1 onion, diced2 cloves garlic, mashed3 tablespoons olive oil3 tablespoons tomato paste1 can black beans, drained1/2 packet or 3 tablespoons Taco Seasoning (I used the packet from Trader Joe’s)salt & pepper to tastevegan queso (I used Zubi’s)1 lime, quartered

  • 1 ½ cups drained and rinsed quinoa
  • 2 ¼ cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, mashed
  • 3 tbsp olive oil
  • 3 tbsp tomato paste
  • 1 can  black beans, drained
  • ½ packet or 3 tablespoons Taco Seasoning (I used the packet from Trader Joe’s)
  • salt & pepper to taste
  • vegan queso (I used Zubi’s)
  • 1 lime, quartered


  • In a large pot, add olive oil over medium heat. 
  • Add onion and mashed garlic. 
  • Stir for a few minutes, until the onion starts to soften. add tomato paste and quinoa and stir for another minute. Add black beans and veggie broth. 
  • Bring to a gentle boil, then cover and reduce heat to low. 
  • Set timer for 20 minutes. 
  • Turn heat off and fluff the quinoa. 
  • Squeeze lime over the quinoa. 
  • Serve and add toppings of choice.

    This turned out delicious! I’m always looking for unique vegetarian recipes to try, and this one fit the bill. I added an additional can of black beans, had a tortilla on the side & am excited to try new toppings next time I make this. My husband and I both enjoyed this!
