One of my favorite holidays is Halloween, and I know that’s probably an unpopular opinion! Sure, as a kid, Halloween is fun (I mean, who doesn’t love free candy?!), but once the trick-or-treating is over, there isn’t much left to enjoy about Halloween. Or, so they say. Child or not, I still enjoy Halloween, and I’ll take any excuse to dream up some spooky recipes! Especially ones that include candy, because what’s Halloween without the candy?
A few months ago, I saw a post on Instagram where an girl was talking about the hate she received for creating a recipe with REAL M&M’s. Despite being someone who preached about intuitive eating – aka eating MOSTLY healthy and following your body’s desires and impulses – there were still haters out there who tried to make her feel as if she was a fraud for sharing a recipe with M&M’s. To which I say, screw the haters!
You see, when I first started out on my own personal health journey, I too was of the belief that in order to be healthy (much less, share my healthy lifestyle online), I had to be healthy 24/7. And not only is that not true, but if you ask me, that sounds exhausting. Even though I eat healthy because it makes me feel better, there’s also times where I want to indulge, and I want to be unapologetic about that indulgence. Like with this recipe!
In this recipe, we are using REAL Reese’s Peanut Butter Cups. But not just any ones- the green ones. They are called Franken-Cups! Oh yeah. When I say we’re making a spooky Halloween recipe, I mean it. These are the real deal, Halloween Peanut Butter Cups, that you probably got in your trick-or-treat basket as a kid. And you know what? They’re freaking delicious.
While I love that there are so many “healthier-for-you” options on the market now, there’s something so satisfying about eating the same treats that you loved as a kid. And this is what this recipe is – a treat! It’s probably not something you’ll want to eat every day, and that’s okay. All good things in moderation, right? 😉
What You Need to Make These Spooky Peanut Butter Blondies
Almond Flour: I use almond flour in almost all my baking and I just love it, because it’s an easy way for me to sneak in the healthy fats and protein. In this recipe I didn’t test other gluten-free flours, so if you use a different flour, just be sure to report back and let me know how it turn out!
Coconut sugar: In this recipe, I love coconut sugar, mostly for texture. You can substitute for maple syrup, though you might have to adjust the baking time (longer) by about 5 minutes.
Baking Powder: You need this so they rise properly!
Peanut Butter: In this recipe we’re using peanut butter, since we’re using peanut butter cups!
Vanilla Extract: Why? Because you need the vanilla!
Eggs: I haven’t tested this recipe with flax eggs, but it should work if you substitute the three eggs for three flax eggs
Reese’s Peanut Butter Cups: Make sure you use the GREEN ones in this recipe, to make them extra spooky! The green peanut butter cups are kind of hard to find! I got them at Walmart, but you can order online. They are called Franken-Cups and they are SO FUN!
Candy Eyeballs: Candy eyeballs are the perfect finishing touch to make this recipe absolutely spooky, and turn our peanut butter cups into little monsters!
How to Make These Spooky Peanut Butter Blondies
Preheat oven to 350 F.
Line an 8×8 baking dish with parchment paper and set aside. Note: be sure to grease the inside of the baking dish first, so the parchment paper sticks and doesn’t move!
Set you baking dish aside.
Grab a medium size bowl, and add all the dry ingredients — whisk until incorporated!
Next, grab another medium size bow, and add the wet ingredients — whisk until incorporated.
Pour the bowl with the wet ingredients into the bowl with the dry ingredients, mixing together until just incorporated.
Next, transfer the dough to the baking dish, using a spatula to make sure it’s even.
Place your peanut butter cups into the dough. You can do as many as you’d like here!
Next, top your peanut butter cups with candy eyes, and sprinkle some more into the dough, because why not!
Bake for 20 minutes.
Remove from oven. Let cool completely.
Slice into 12 small squares, and enjoy!
How to Store These Peanut Butter Blondies
I highly doubt these will stay too long, especially if you’re like me and have a big sweet tooth. But in-case you wind up with extras, here is the best way to store them.
Since these blondies are gluten free and don’t contain regular flour, they tend to hold more moisture than regular blondies, so you can leave them out, on the counter, for a day or two. But any longer than that, and you should store them in the fridge. They’ll stay fresh in an airtight container for up to one week!
