Creamy, dreamy, and loaded with protein, these no-bake bites come together in just minutes and are so, so satisfying. Think of them like the nostalgic flavors of a classic s’more, but frozen, protein-packed, and made with ingredients you can feel good about.

    Friends, this recipe has become one of my favorite frozen sweet treats, and I have a feeling it’s about to take over yours too. If you’re someone who loves a good frozen treat but also wants something that actually keeps you fueled and feeling strong, this one has your name all over it.

    I want to give credit where credit is due — this recipe was inspired by @_proteinprincesss, and the moment I came across it, I knew I had to make it my own. It checks every single box—no oven required, minimal ingredients, and it comes together in under ten minutes before it goes into the freezer. Whether you’re looking for something to satisfy an after-dinner sweet tooth or a midday snack that actually does something for your body, these Frozen Protein S’mores are it.

    The base is a simple rice cake. They’re light and the perfect vehicle for the creamy protein topping. The filling is a whipped blend of CocoWhip, sugar-free vanilla pudding mix, and vanilla protein powder, and when you spread it onto those rice cakes and top everything with melted dairy-free chocolate and a pinch of flaky salt, it’s kind of hard to believe something this good is this easy to make. The freezer does the rest of the work, and what comes out is this cool, creamy, chocolatey bite that tastes like dessert but delivers a nice boost.

    • Sugar-Free Vanilla Pudding Mix: Sugar-free vanilla pudding mix adds just the right amount of sweetness and helps thicken the creamy topping.
    • CocoWhip: CocoWhip is a dairy-free whipped topping made from coconut cream, and it’s what gives this filling its light, fluffy texture. You can find it in the frozen section at most health food stores.
    • Vanilla Protein Powder: This is what takes these from a fun treat to an actually filling snack. I love a good whey or plant-based vanilla protein here, and both work equally well.
    • Dairy-Free Chocolate Chips: Melt them down slowly so they stay smooth and pourable — Enjoy Life is my go-to brand!
    • Flaky Salt: Don’t skip the flaky salt! A small pinch on top of the melted chocolate adds that sweet-salty contrast.
