In a blender, add all ingredients.
Blend on high for 20 seconds.
Heat a large pan on the stove over medium heat.
Generously spray the pan with oil.
Pour half the batter into the pan.
After about two minutes, or when you start to see bubbles, flip to the other side, for another minute.
Transfer to plate, respray the pan, and repeat with with remaining batter.
I topped mine with powdered sugar, cinnamon, and maple syrup.
