PALEO GOLDEN CHOCOLATE CHUNK COOKIES

Ingredients

  • 3/4 cup Georgia Grinders cashew butter (or any nut butter)
  • 1 tbsp coconut oil
  • 1 Vital Farms pasture raised, organic egg
  • 1/4 tsp coconut sugar
  • 2 tbsp coconut flour
  • 1 tsp baking soda
  • 2 tsp Moodbeli golden turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 Eating Evolved signature dark chocolate bar, roughly chopped

Instructions

  • Preheat oven to 350.
  • Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the cashew butter, coconut oil, egg, and coconut sugar, until nice and creamy.
  • Next add the coconut flour, baking soda, golden turmeric, cinnamon, and salt.
  • Fold in 1/2 of the chocolate bar, saving the rest for the top.
  • Using a cookie scoop, form cookie and place them on the baking sheet.
  • Sprinkle remaining chocolate on top, and bake for 6 - 7 minutes.
