Off to Pittsburgh this morning to visit Greg’s family. I’m sure Gavyn and Hunter will each come home with obnoxious amounts of Penguins, Pirates, and Steelers gear that they will never take off. But first, these PALEO GOLDEN CHOCOLATE CHUNK COOKIES, because nope, I can’t leave without sharing a new recipe, and these are GOOD.
- ¾ cup Georgia Grinders cashew butter (or any nut butter)
- 1 tbsp coconut oil
- 1 Vital Farms pasture raised, organic egg
- ¼ tsp coconut sugar
- 2 tbsp coconut flour
- 1 tsp baking soda
- 2 tsp Moodbeli golden turmeric
- ½ tsp cinnamon
- ½ tsp salt
- 1 Eating Evolved signature dark chocolate bar, roughly chopped
Preheat oven to 350.
Line a baking sheet with parchment paper.
In a medium bowl, whisk together the cashew butter, coconut oil, egg, and coconut sugar, until nice and creamy.
Next add the coconut flour, baking soda, golden turmeric, cinnamon, and salt.
Fold in 1/2 of the chocolate bar, saving the rest for the top.
Using a cookie scoop, form cookie and place them on the baking sheet.
Sprinkle remaining chocolate on top, and bake for 6 - 7 minutes.
