HEALTHY CHICKEN NOODLE STIR FRY

Ingredients

  • 1 pound skinless, boneless chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 4 cloves garlic, mashed
  • 8-10 oz spaghetti noodles (I used Banza)
  • 2 cups broccoli florets
  • 1 bunch scallions, chopped
  • 2 tbsp sesame seeds
  • ½ tsp ground ginger
  • 1 tbsp coconut sugar
  • ½ cup coconut aminos
  • 2 tbsp sesame oil
  • ¼ tsp crushed red pepper flakes
  • salt and black pepper to taste

Instructions

  • Cook spaghetti according to package instructions.
  • Toss in the broccoli about 5 minutes before the pasta is done cooking.
  • Once done, drain and set aside.
  • While pasta is cooking, get a medium bowl and whisk together the ginger, garlic, coconut sugar, coconut aminos, sesame oil, red pepper flakes, and set aside.
  • Next, heat a large skillet on the stove and add olive oil to generously coat the pan.
  • Season chicken with salt and pepper, and add to pan, flipping to the other side after about 4 minutes or so.
  • Add spaghetti & broccoli to the skillet, along with the sauce, and mix to coat everything well.
  • Add scallions and sesame seeds, and salt & pepper to taste.
