ONE POT SPINACH ARTICHOKE SAUSAGE PASTA

Ingredients

  • 1 package pasta of choice (I used linguine)
  • 1 package sausage of choice (I used True Story Foods Siracha Jalapeño Chicken), sliced into 1/2 inch pieces
  • 1 12 oz jar marinated artichoke hearts, drained
  • 2 tbsp Lucini Italia olive oil
  • 1 bunch organic spinach
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 4 1/4 cups water
  • 1/2 cup shredded parmesan cheese (optional)
  • 1 bunch chives, chopped (optional)

Instructions

  • In a large pot, add the pasta, sausage, artichoke hearts, olive oil, spinach, sea salt, pepper, and water.
  • Bring to a boil, using tongs to mix everything together make sure the pasta doesn't stick together
  • Once it comes to a boil, reduce heat to low and cover.
  • Let cook over low heat for 8-9 minutes.
  • Once done, add the chives and sprinkle parmesan cheese on top.
  • Adjust seasonings to taste!
