PEANUT BUTTER WHITE CHOCOLATE CHIP COOKIES

Ingredients

  • 1 cup almond flour
  • ¾ cup creamy peanut butter
  • cup maple syrup
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • ¾ cup white chocolate chips
  • 1 egg or flax egg (1 tb ground flax meal + 3 tbsp water)

Instructions

  • Preheat oven to 350.
  • Line a baking sheet with parchment paper.
  • If using a flax seed, make it in a small bowl and set aside to thicken.
  • In a medium bowl, add the almond flour, peanut butter, maple syrup, vanilla, and sea salt.
  • Mix well and then fold in the chocolate chips, followed by the egg/flax egg.
  • Form 12-16 cookies and bake for 10-11 minutes.
  • They will be nice and soft with a crunchy outside.
