Preheat oven to 350.
Line baking sheet with parchment paper.
In one bowl, whisk the egg.
Add the olive oil, coconut sugar, flours, flaxseed, and baking soda.
Gently fold in the chocolate, reserving a few pieces to sprinkle on top.
Use a cookie scoop and drop dough into cookies. sprinkle any remaining chocolate on top and bake for 12ish min.
Remove from oven and sprinkle sea salt and chopped hazelnuts on top.
