Paleo Hazelnut Chocolate Chip Cookies

PALEO HAZELNUT CHOCOLATE CHUNK SEA SALT COOKIES - INGREDIENTS1 1/2 bars Hu Kitchen hazelnut paleo chocolate bar, roughly chopped1 cup almond flour1/4 cup coconut flour3 tb ground flaxseed meal1/2 cup coconut sugar1/4 cup olive oil1 egg1 tsp baking sodasea salt to sprinkle on topchopped hazelnuts to sprinkle on top (optional)

Here’s the deal. You know I bake a lot and you also know I recovered from an eating disorder. Can I actually eat these things without relapsing? It’s actually a good question. The answer? YES. Because the urges to binge for me were caused, in large part, due to the copious amounts of refined sugars and processed foods that were in my diet, stimulating the urge to binge eat, more and more and more. Sure, these cookies have a little coconut sugar, and some would say that sugar is sugar. and maybe for some that is, but for me, a little coconut sugar, honey, and maple syrup in my diet is AOK. It’s all natural and it’s not processed, so it just doesn’t have the same effect on my body. Now will I be ready to win a swimsuit competition eating all
of these? Probably not, but luckily that’s not my thing. Here’s the recipe, GET TO IT.

PALEO HAZELNUT CHOCOLATE CHUNK SEA SALT COOKIES

Ingredients

  • 1 ½ bars Hu Kitchen hazelnut paleo chocolate bar, roughly chopped
  • 1 cup almond flour
  • ¼ cup coconut flour
  • 3 tbsp ground flaxseed meal
  • ½ cup coconut sugar
  • ¼ cup olive oil
  • 1 egg
  • 1 tsp baking soda
  • sea salt to sprinkle on top
  • chopped hazelnuts to sprinkle on top (optional)

Instructions

  • Preheat oven to 350.
  • Line baking sheet with parchment paper.
  • In one bowl, whisk the egg.
  • Add the olive oil, coconut sugar, flours, flaxseed, and baking soda.
  • Gently fold in the chocolate, reserving a few pieces to sprinkle on top.
  • Use a cookie scoop and drop dough into cookies. sprinkle any remaining chocolate on top and bake for 12ish min.
  • Remove from oven and sprinkle sea salt and chopped hazelnuts on top.
  • Enjoy friends!!!
