Preheat oven to 350.
In a small bowl, combine dry ingredients, mix together well, and set aside.
In another bowl, whisk together the almond milk, maple syrup, applesauce, melted coconut oil, and eggs.
Pour the dry mixture into the wet mixture, and mix together well, using a hand mixer or spoon. Don’t over mix, but try to get any clumps out.
Fold in the apples and chocolate chips, reserving a small amount for the topping
Pour batter into a parchment lined loaf pan. I always recommend spraying the inside of the loaf pan before laying down the parchment paper, so it sticks.
Top with any remaining apple pieces and chocolate chips.
Bake for 50 minutes, or until a toothpick comes out clean.
