Paleo Chocolate Chip Apple Bread

PALEO CHOCOLATE CHIP APPLE BREAD - INGREDIENTS1/2 cup almond flour1/2 cup coconut flour3 large eggs2 tsp baking powder1/2 tsp salt2 tb apple pie spice (I used Primal Palate Apple Pie Spice, but if you don’t have it, just toss in equal parts nutmeg and cinnamon)1/2 cup almond milk (or other non-dairy milk)1/4 cup apple sauce3 tb maple syrup1 tb melted coconut oil1 1/2 cups diced apple3/4 cup of Enjoy Life Foods Dark Chocolate Morsels

 T’is the season for APPLES. It’s finally time to say goodbye to all the summer fruits: strawberries, peaches, nectarines, and plums. It’s actually really sad time for me, since they are, by far, my favorite fruits. But enough lamenting about that. Let’s chat about apples.

I’m always kind of “ugh” about what to make with apples. And unless you are an apple monger, I’ll bet you are too. But today I created the perfect Paleo Chocolate Chip Apple Bread, made with a mixture of almond flour and coconut flour. It’s light and fluffy, yet packed with apples and my favorite dairy free chocolate chips. It’s cinnamony, nutmeggy, and basically SCREAMS fall time.

I know one of you will ask whether you can make this vegan by substituting a flax egg. The answer? I don’t see why not, but I haven’t tried. I test all of my recipes 3-4 times before sharing them with you, but I don’t try a million different variations or else nothing would get done around here. So let’s get right to it.

Ingredients

  • ½ cup almond flour
  • ½ cup coconut flour
  • 3 large eggs
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 tbsp apple pie spice (I used Primal Palate Apple Pie Spice, but if you don’t have it, just toss in equal parts nutmeg and cinnamon)
  • ½ cup almond milk (or other non-dairy milk)
  • ¼ cup apple sauce
  • 3 tbsp maple syrup
  • 1 tbsp melted coconut oil
  • 1 ½ cups diced apple
  • ¾ cup of Enjoy Life Foods Dark Chocolate Morsels

Instructions

  • Preheat oven to 350.
  • In a small bowl, combine dry ingredients, mix together well, and set aside.
  • In another bowl, whisk together the almond milk, maple syrup, applesauce, melted coconut oil, and eggs.
  • Pour the dry mixture into the wet mixture, and mix together well, using a hand mixer or spoon. Don’t over mix, but try to get any clumps out.
  • Fold in the apples and chocolate chips, reserving a small amount for the topping
  • Pour batter into a parchment lined loaf pan. I always recommend spraying the inside of the loaf pan before laying down the parchment paper, so it sticks.
  • Top with any remaining apple pieces and chocolate chips.
  • Bake for 50 minutes, or until a toothpick comes out clean. 
  • Enjoy!

  1. Hello, I don’t have any coconut flour. I do have paleo baking flour, bobs red mill 1-1 flour, King Arthur measure for measure gf flours. I do have almond flour.
