ONE BOWL PECAN CHOCOLATE CHIP BREAD

Ingredients

  • 3 ripe bananas
  • 1 egg
  • ½ cup coconut sugar
  • 3 tbsp melted coconut oil
  • 4 tsp baking powder
  • ½ tsp sea salt
  • ¾ tsp cinnamon
  • ¾ cup non-dairy milk
  • 1 ¼ cup almond flour
  • 1 ¼ cup gluten free flour (I like Bob’s Red MillGluten Free 1:1 flour)
  • 1 cup gluten free oats
  • ¼ cup chopped pecans (plus more for topping)
  • ½ cup dairy free chocolate chips (plus more for topping)

Instructions

  • Preheat your oven to 350 degrees. Next, line a 9 x 5 inch loaf pan with parchment paper (pro tip: spray your loaf pan with coconut oil or rub the pan with coconut oil BEFORE putting the parchment paper in—the oil holds the parchment paper in place!)
  • In a large bowl, mash your bananas.
  • Then add the remaining ingredients and mix until well combined. 
  • Pour the batter into the loaf pan and top with lots of extra chocolate chips and chopped pecans. 
  • Bake for 75 minutes or until toothpick comes out clean. Get ready for your life to be changed!
