Grain-Free Tahini Chocolate Chunk Granola

This grain-free tahini chocolate granola is packed with so much goodness, including my favorite ingredient: tahini. Combine that with chocolate chunks and you've got the tastiest paleo granola around town.

Ingredients

  • 1 cup pecans
  • ½ cup walnuts
  • ¾ cup almonds
  • ¼ cup maple syrup
  • cup tahini
  • 2 tablespoons coconut oil melted and cooled
  • ½ teaspoon vanilla extract
  • 1 cup unsweetened coconut flakes
  • ¼ teaspoon cardamom
  • ½ teaspoon cinnamon
  • 1 teaspoon sea salt
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 300.
  • Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the maple syrup, tahini, melted coconut oil, vanilla extract, cardamom, cinnamon, and sea salt.
  • Next, add the nuts and coconut shreds.
  • Stir to coat everything well.
  • Transfer the granola to the baking sheet and press down, so the ingredients are in one layer, but as close together as possible.
  • Bake for 15 minutes, then rotate the tray and bake for another 15 minutes.
  • Allow the granola to cool for 15 minutes and then add the chocolate chips (the chocolate should melt just a little).
  • Once completely cool, break the granola apart and enjoy!!!
