Crispy, spiced sweet potatoes, finely chopped kale, brown rice, cranberries, and feta, all tossed in a bright lemon tahini dressing. This is the ultimate fall salad, hearty enough to be a meal on its own and sturdy enough to meal prep for the week!
Start by preheating your oven to 425 F. Add the cubed sweet potatoes to a large bowl and toss them with the avocado oil, garlic powder, onion powder, cumin, paprika, salt, and pepper until every piece is coated.
Spread them onto a large baking sheet in a single layer. Bake for 35 minutes, flipping them at the halfway point, until they’re crispy and golden.
While the potatoes are in the oven, make the dressing. Add the tahini, lemon juice, maple syrup, garlic, salt, and pepper to a small blender and blend until smooth.
If it’s on the thick side, add water a little at a time until it’s pourable, then set it aside.
Once the sweet potatoes come out of the oven, add the kale, cooked brown rice, parsley, dried cranberries, and feta right to the sheet pan.
Pour the lemon tahini dressing over the top and toss until everything is well coated. Serve it warm or let it cool, and enjoy!
