This Sheet Pan Roasted Sweet Potato Kale Salad with Lemon Tahini Dressing is the ultimate fall salad, and I don’t say that lightly. Crispy, spiced sweet potatoes get tossed with finely chopped kale, brown rice, fresh parsley, dried cranberries, and feta, then coated in a bright, garlicky lemon tahini dressing. It’s hearty enough to be a meal on its own, works as a side for just about any fall dinner, and because kale holds up so much better than lettuce, it’s a dream for meal prep.

Friends, if you know me, you know fall is my favorite time of year, and this salad tastes exactly like it. Warm spices, roasted sweet potatoes, little pops of tart cranberry. It’s cozy in a way most salads just aren’t, and it’s fibermaxxing to the max 😉 Between the sweet potatoes, kale, brown rice, parsley, and cranberries, there’s fiber in nearly every bite, which is why one bowl actually keeps you full and energized instead of hunting for a snack an hour later.
The other reason this one is on heavy rotation for fall: kale doesn’t get soggy the way lettuce does. You can toss everything together, dress it, and pack it up for lunches without opening a container of limp, watery greens on day two. The kale softens a little as it sits in the lemon tahini dressing, and honestly, I like it even more that way.
And a quick note on the rice, because this is where I save myself some time. I use defrosted frozen brown rice here. Grab a bag from the freezer aisle, let it defrost, and it’s ready to go by the time the potatoes come out.

What You Need to Make This Fall Kale Salad
- Sweet Potatoes: Try to cut the cubes about the same size so they roast evenly and all get crispy at the same time.
- Curly Kale: Chopping it finely makes every bite easier to eat and helps it hold onto the dressing. Curly kale is also sturdy, which is exactly why this salad doesn’t get soggy in the fridge.
- Brown Rice: I use defrosted frozen rice to save time, but any brown rice you have works just as well.
- Italian Parsley: It adds a fresh, herby brightness that keeps all the hearty ingredients from feeling heavy.
- Dried Cranberries: Dried cranberries bring sweet-tart pops of flavor that play so well with the spiced sweet potatoes and salty feta.
- Feta Cheese: Crumbled feta adds salty, creamy bites throughout the salad.
- Avocado Oil: Avocado oil has a high smoke point, so it holds up at 425 F and helps the sweet potatoes get crispy and golden. Olive oil works in a pinch.
- Garlic Powder: It clings to the cubes better than fresh garlic and won’t burn at high heat.
- Onion Powder: Adds a subtle savory depth that rounds out the spice blend.
- Cumin: Ground cumin gives the sweet potatoes a warm, earthy flavor that tastes like fall.
- Paprika: Paprika adds gorgeous color and a mild, slightly sweet warmth.
- Kosher Salt: Kosher salt seasons both the sweet potatoes and the dressing.
- Black Pepper: It adds a little bite that balances the sweetness from the potatoes, cranberries, and maple.
- Tahini: Tahini is a paste made from ground sesame seeds, and it’s what makes this dressing creamy without any dairy.
- Lemon Juice: Fresh-squeezed tastes noticeably better than bottled here.
- Fresh Garlic: It gives the dressing a bold, garlicky kick that stands up to the tahini.
- Maple Syrup: Balances the acidity of the lemon.
- Water: Tahini thickness varies a lot from brand to brand, so you’ll add water a little at a time until the dressing is pourable.

How to Make This Sheet Pan Sweet Potato Kale Salad
Start by preheating your oven to 425 F. Add the cubed sweet potatoes to a large bowl and toss them with the avocado oil, garlic powder, onion powder, cumin, paprika, salt, and pepper until every piece is coated. Spread them onto a large baking sheet in a single layer. Bake for 35 minutes, flipping them at the halfway point, until they’re crispy and golden.
While the potatoes are in the oven, make the dressing. Add the tahini, lemon juice, maple syrup, garlic, salt, and pepper to a small blender and blend until smooth. If it’s on the thick side, add water a little at a time until it’s pourable, then set it aside.
Once the sweet potatoes come out of the oven, add the kale, cooked brown rice, parsley, dried cranberries, and feta right to the sheet pan. Pour the lemon tahini dressing over the top and toss until everything is well coated. Serve it warm or let it cool, and enjoy!

Frequently Asked Questions
Absolutely. It’s great warm, straight off the sheet pan, but it’s also delicious cold from the fridge the next day, which is what makes it such a good meal prep lunch.
Quinoa is a great swap and keeps this gluten-free. Farro works too and adds a nice chew, but keep in mind it contains gluten.
This salad is a meal on its own, but it’s easy to make it even heartier. Toss in shredded chicken, chickpeas, or flaked salmon.
Tahini varies a lot by brand. Some are runny and some are basically paste. Just add water a tablespoon at a time and blend until it’s pourable. It will also thicken a little in the fridge, so add a splash of water to loosen it if you made it ahead.
Yes! Use a dairy-free feta or skip it entirely. Everything else in the salad and the dressing is already dairy-free.
