Snickers Mousse Cups

Imagine for a moment if your favorite candy bar got a healthy and delicious high-protein twist - except with this recipe, you don't have to imagine. These are my Snickers Mousse Cups, and these rich and creamy cups are filled with all of the ingredients of a classic Snickers bar that you know and love. They start out with a creamy, greek-yogurt peanut butter base, topped with a thick peanut butter layer, a hard chocolate topping, and a finish of chopped peanuts and sea salt. The end result? The perfect healthy snack to satisfy your chocolate cravings.

Ingredients

For the Mousse Cups:

  • 2 Cups Greek Yogurt
  • ½ Cup Powdered Peanut Butter
  • ¼ Cup Maple Syrup
  • ½ Cup Creamy Peanut Butter
  • 2 Tablespoons Maple Syrup
  • 3 Tablespoons Water
  • 1 Cup Dairy-Free Chocolate Chips
  • 2 Tablespoons Coconut Oil

For Garnishing:

  • ½ Cup Salted Peanuts chopped
  • Flaky Sea Salt

Instructions

  • To make these mousse cups, start by preparing the mousse. Add the greek yogurt, powdered peanut butter, and maple syrup to a medium bowl. Mix until smooth.
  • Divide the yogurt mixture between four individual jars. Set them aside.
  • Next, in a separate bowl, mix together the creamy peanut butter, maple syrup, and water, until the mixture is smooth and easy to drizzle.
  • Drizzle the mixture evenly on top of each jar.
  • Then, prepare the chocolate topping. Add the chocolate chips and coconut oil to a small bowl.
  • Transfer them to the microwave and microwave them in 2-3, 30 second increments, stirring in-between. You can also do this on the stove, using the double-boiler method.
  • Once the chocolate is melted, spoon it evenly on top of each jar.
  • Then, crush the peanuts and sprinkle them on top, followed by the sea salt.
  • Once the mousse cups have been prepared, transfer them to the fridge and allow them to set for a minimum of one hour.
  • Once the mousse cups have set and the chocolate has hardened, remove them from the fridge. Serve and enjoy!
