If you're looking for a delicious, sweet, and healthy snack that is not only packed with protein, but is PERFECT to grab and go, then look no further because this recipe is IT! These Viral Blueberry Yogurt Clusters are a crunchy, creamy, and delicious snack that is perfect any time of day. They are made with four simple and easy ingredients, and can easily be made vegan-friendly to satisfy all palates. My boys and I absolutely LOVE this recipe, and I know you and your family will, too!

Ingredients

  • 2 Cups Blueberries rinsed and dried
  • 1 Cup Vanilla Greek Yogurt
  • 1 Cup Chocolate Chips
  • 1 Teaspoon Coconut Oil

Instructions

  • To make these clusters, start by washing your blueberries and drying them well, adding them to a bowl once they're cleaned.
  • Next, add your yogurt to the bowl and toss until the blueberries are fully coated in the yogurt.
  • Scoop your blueberries into 6-8 scoops and place them onto a parchment paper lined baking sheet and freeze for 20 minutes.
  • In a separate small bowl, add your chocolate chips and coconut oil and melt in 2, 30-second increments in the microwave until it's completely smooth. Be sure to mix the coconut oil and chocolate in-between increments, so it combines together.
  • Once your chocolate is melted, remove your tray of blueberries from the freezer and dip each cluster into the chocolate. The chocolate will form a shell on top of each one!
  • Add a sprinkle of sea salt if desired, then eat and enjoy! Store any leftovers in the fridge for up to one week.
