If you're looking for the perfect, healthy, low-carb alternative to traditional sandwich bread, then you will love these Viral Low Carb Zucchini Wraps. They swap the bread for layers of zucchini that are coated in a sprinkle of mozzarella cheese and baked until they're golden brown. The end result? A light, crunchy, cheesy "wrap" that is perfect for sandwiching all of your favorite ingredients, for a healthy meal on-the-go!

Equipment

  • Mandolin this is essential to getting the zucchini slices nice and thin!

Ingredients

  • 2 Zucchinis sliced thin and evenly - I recommend using a mandolin
  • 1 Cup Mozzarella Cheese shredded
  • 1 Teaspoon Olive Oil
  • 1 Pinch Sea Salt
  • 1 Pinch Ground Black Pepper

Instructions

  • To make these wraps, start by preheating your oven to 350 F.
  • Next, prepare the zucchini. Wash the zucchinis and slice them nice and thin, using a mandolin.
  • Then, lay the zucchini slices in a 5 x 4 slice rectangle, being sure to overlap them so that there are no gaps.
  • Next, drizzle the olive oil very lightly over the zucchini rectangles and season them with a sprinkle of sea salt and ground black pepper, Be sure to not use too much oil, otherwise the zucchini wraps will get soggy!
  • Then, sprinkle the mozzarella cheese across the tops of the zucchini rectangles.
  • Transfer the zucchini to the oven and allow it to bake for 25 minutes, until the cheese on top is golden and bubbly.
  • Once the wraps are done, remove them from the oven. Allow them to cool completely, then fill with your favorite sandwich ingredients and enjoy!
