½Seedless Watermeloncubed (this is approximately 5 cups)

4Persian Cucumberssliced into 1/4” coins
1CupFeta Cheesecubed
½CupFresh Mintchopped
Instructions
To make this salad, start by preparing the Honey Vinaigrette. Add all of the vinaigrette ingredients (the olive oil, apple cider vinegar, dijon mustard, honey, garlic, dried oregano, kosher salt, and ground black pepper) to a blender.
Blend until the vinaigrette is completely smooth.
Taste and adjust the seasonings as needed, then set the vinaigrette aside while you prepare the salad,
Wash and chop the watermelon, strawberries, and Persian cucumbers, and add them to a large bowl.
Then, cube the feta cheese and chop the mint and add them to the bowl with the fruit.
Pour the vinaigrette on top of the salad and toss to combine.
