If you're looking for your new favorite salad recipe that will be on repeat all summer long, then look no further than my easy Watermelon Strawberry Cucumber & Feta Salad. This bright and refreshing summer salad comes together with chunks of fresh cut watermelon, sliced strawberries, and cool cucumbers that are tossed with feta cheese and fresh mint, then topped off with a delightful honey vinaigrette. The end result is a super fresh salad that is perfect for pairing along any of your favorite summertime recipes!

Ingredients

For the Honey Vinaigrette:

  • Cup Olive Oil
  • 3 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Dijon Mustard
  • ¼ Cup Honey
  • 2 Cloves Garlic
  • 2 Tablespoons Dried Oregano
  • 1 Teaspoons Kosher Salt
  • ½ Teaspoons Ground Black Pepper

For the Salad:

  • ½ Seedless Watermelon cubed (this is approximately 5 cups)⁣
  • 1 Pint Strawberries sliced (this is approximately 1 1/2 cups)⁣
  • 4 Persian Cucumbers sliced into 1/4” coins⁣
  • 1 Cup Feta Cheese cubed⁣
  • ½ Cup Fresh Mint chopped⁣

Instructions

  • To make this salad, start by preparing the Honey Vinaigrette. Add all of the vinaigrette ingredients (the olive oil, apple cider vinegar, dijon mustard, honey, garlic, dried oregano, kosher salt, and ground black pepper) to a blender.
  • Blend until the vinaigrette is completely smooth.
  • Taste and adjust the seasonings as needed, then set the vinaigrette aside while you prepare the salad,
  • Wash and chop the watermelon, strawberries, and Persian cucumbers, and add them to a large bowl.
  • Then, cube the feta cheese and chop the mint and add them to the bowl with the fruit.
  • Pour the vinaigrette on top of the salad and toss to combine.
  • Serve immediately and enjoy!
