8 Family-Friendly Chicken Recipes

I think it’s safe to say that in many households, chicken is a staple dish. For my family, it’s our go-to on both on the days when we want something comforting and fun, and on the days when we can’t think of anything else we want to eat (fun fact, it happens to the best of us, even if we happen to be food bloggers! Ha!)

Over the years of developing recipes here, I have created quite a few different chicken recipes that are simple, healthy, delicious, and crowd-pleasers for the entire family! My family and I make these recipes on the regular, and I have a feeling they may become staples in your household, too!

So, in this post I’ve compiled a roundup of 8 family-friendly chicken recipes! All of these are fairly simple, and can be meal prepped ahead of time / eaten throughout the week. Trust me when I say that you’ll want to save this post for those days where you just don’t know what to make, because it will save dinner time! And these recipes are way better than takeout… just saying.

No. 1 – Paleo Cashew Chicken

Move over Panda Express, this Paleo Cashew Chicken is about to rock your world! The chicken is coated with lots of sauce (no sauce shortage here) and then it all gets tossed with lots of crunchy broccoli, for the perfect quick and easy, family-friendly dinner in under 30 minutes!

This meal is basically an upgraded cashew chicken stir fry. The chicken breast pieces are first coasted with tapioca/arrowroot flour, so that the chicken doesn’t stick to the pan and the sauce reallyyyy sticks to the chicken well. Then, we add some broccoli florets, which stay crisp-tender – exactly the way I like it. No soggy broccoli here.

No. 2 – Crispy Parmesan Chicken Strips

If there’s one thing I love, it’s chicken parmesan, these Crispy Chicken Parmesan Strips are where it’s at! These chicken strips turn out perfectly seasoned and so delicious – packed with Italian seasonings and parmesan cheese, for the perfect flavor! You can serve them on their own, over cauliflower rice, or if you are feeling decadent like me, over a simple garlic-olive oil pasta. That part is optional – but making these yummy chicken parmesan strips is mandatory! These are an absolute favorite in my household.

No. 3 – One Pan Greek Chicken and Lemon Rice

Busy days call for easy dinners. But if you are like me, you also don’t want to sacrifice taste. That’s where my One Pan Greek Chicken and Lemon Rice comes in. This meal is super flavorful, no one will even know that you made this restaurant-quality dish using just one large skillet! Think, flavorful chicken mixed with buttery, lemony rice. It’s delicious, and my mouth is watering at the thought of making this dish!

No. 4 – Sheet Pan Bruschetta Chicken Breasts

On a busy weeknight, there are few things better (or more relieving) than a sheet pan dinner, and my sheet pan bruschetta chicken breasts are as simple as it gets. These are perfect for the nights where you aren’t sure what to feed your family, or you just want to make something easy that you don’t have to think too much about. This recipe is gluten-free, paleo, low-carb, and a crowd-pleaser for the entire family. This is one of my newest chicken recipes, and people have been LOVING it!

No. 5 – Easy Chicken Marsala

This Easy Chicken Marsala lives up to its name about being easy; it’s only 8 ingredients! The best part? It’s actually restaurant quality! I know that’s a bold statement, but by now, you know that I don’t steer you wrong. Chicken Marsala happens to be one of my favorite dinner recipes, and I have a feeling it will become one of your favorites, too.

No. 6 -Comforting Chicken Burrito Casserole

This Comforting Chicken Burrito Casserole is one of my most-made recipes when I shared it on Instagram last year. It’s the ultimate comfort food, but packed with good-for-you ingredients, like shredded chicken, tomatoes, corn, beans, spices, and of course some cheese for good measure. My favorite thing about this recipe is how easy it is to make! It’s essentially just a layering project and then you bake it in the oven. We make this for dinner a few times each month, and it’s also a great one to make on a game day!

No. 7 – Creamy Tomato Garlic Chicken Thighs

Get ready for it, you guys won’t BELIEVE how delicious these Creamy Tomato Garlic Thighs are! Just take a look at these ingredients, you will be blown away at the simplicity. This is a one-pan dinner that comes together in a matter of minutes — the chicken cooks absolutely perfectly and stays moist cooking it in a pan, which is a total win in my book. Best part is, your family will love this recipe, which makes for a great, easy recipe to keep in your back pocket!

No. 8 – Tomato Basil Cashew Chicken Tenders

If the pandemic has taught me one thing, it’s that being a stay-at-home mom is HARD! Cooking three meals a day is much harder than it seems, especially when you’re cooking for two picky little boys. Thankfully, one dish that we can all get behind are chicken tenders (what kid doesn’t like chicken tenders?!) And, these are adult-friendly, aka you’re not going to find a plain-Jane, frozen tender here! These are the real deal, and if my kids love them, then yours will too.
