Buffalo Cauliflower Wings

 August 18, 2020

These Buffalo Cauliflower Wings are truly the perfect spicy snack, whether for a big game day (like the Super Bowl) or really any time you get that craving for wings! The best part? They are baked, and come together in under 30 minutes. I love this recipe so much, I promise you won’t even miss the chicken!

I’m not going to lie and tell you that these taste like chicken wings. Because chicken is chicken and cauliflower is f’ing cauliflower. But what I can promise, is that these cauliflower “wings” are so damn good, you won’t miss the chicken. Plus, they are baked, not fried, which means they are 100% guilt free!

Reasons why I love this recipe:

  1. These “wings” are gluten free! I always make them using Bob’s Red Mill Gluten Free 1:1 flour, BUT, I have also made them with chickpea flour, oat flour, and even cassava flour, and they turn out PERFECT! So pick what works for you.

  2. They are dairy free! So many of these cauliflower “wings” recipes call for buttermilk, which is awesome, BUT a lot of you can’t have dairy, and to be honest, it’s hard for me to digest too. So pick your non-dairy milk of choice, and you are set. A perfect result every time!

  3. The crunch factor! No one wants a soggy wing, so I’ll go on the record and tell you that no one wants a soggy cauliflower wing, either. I assure you, you’ll get that crunch that we all know and love.

How to Store Buffalo Cauliflower Wings:

These bad boys are best eaten when they come out of the oven, so that they retain their crunch factor. Cauliflower is one of those vegetables with a high water content, which is why you shouldn’t let them sit. Munch immediately! If you do need to reheat them, that’s ok. I promise I won’t judge! Just reheat the oven to 450F and bake for another 5-7 minutes. You will be all set!

Ingredients

  • 1 large head of cauliflower
  • 1 cup gluten-free flour
  • 2 teaspoons garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ cup Buffalo sauce of choice
  • 1 cup dairy free milk of choice
  • Garnish: green onions or chives ranch dressing

Instructions

  • Preheat oven to 450.
  • Line a baking sheet with parchment paper and set aside.
  • Wash your cauliflower and break it into small florets.
  • Next, grab a bowl, and whisk together the flour, garlic powder, black pepper, paprika, and salt.
  • Add the non-dairy milk and give it a good whisk until there are no clumps (or almost no clumps, totally fine if there are a few!).
  • Dip each piece of cauliflower into the mixture, and then line them up on the baking sheet, making sure they don’t touch — give these babies space!
  • Bake for 20 minutes.
  • Remove from the oven.
  • Pour your buffalo sauce into a bowl, then dip each cauliflower floret into the buffalo sauce, and place them back onto the baking sheet, giving them space again.
  • Bake for another 20 minutes.
  • Remove from the oven!
  • Garnish with fresh chives or green onions and serve with ranch dressing.
  • Enjoy!
