
Ingredients
- 2 lbs chicken tenders
- 1 of each color bell peppers (green, yellow, red, orange)
- 1 onion
- 4 cloves garlic, mashed
- 3 tbsp olive oil
- 1 lime
- cilantro to taste
FOR THE SEASONING:
- ½ tsp chipotle powder
- 1 tsp chili powder
- 1 tsp paprika
- 2 tbsp cumin
- 1 tsp sea salt
- ½ tsp pepper
Instructions
- Preheat oven to 400.
- Prepare seasoning by mixing ingredients in a medium size bowl. Set aside.
- Slice bell peppers and onions into strips and place into a large bowl.
- Slice chicken tenders into smaller strips and add to the bowl.
- Add mashed garlic, followed by the olive oil.
- Now pour the seasoning over everything and make sure to coat evenly.
- Transfer to a baking sheet.
- Bake for 25 minutes or so, moving things around/flipping at the halfway point.
- Add chopped cilantro and drizzle lime juice on top.Enjoy!
