Ingredients
- 1 box Simple Mills Banana Bread Mix
- 2 medium carrots, grated
- ¾ cup raisins
- ½ tsp cinnamon
- 2 tbsp oil (I recommend avocado oil)
- ½ cup water
- 3 eggs
- ¼ cup unsweetened shredded coconut
- ¾ container vanilla or cream cheese frosting of choice
Instructions
- Preheat oven to 325.
- Line and 8×8 baking dish with parchment paper or just grease well.
- In a large mixing bowl, whisk together the oil, water and eggs. once smooth, add the banana bread mix, carrots, raisins, and cinnamon.
- Transfer from mixing bowl to the baking dish.
- Use a spatula to make sure the batter is even.
- Bake for 23-24 minutes (until a toothpick comes out clean).
- Let cool completely before frosting—this is important.
- Frost the cake and evenly distributed the shredded coconut.
- Cut into 12 bars.
