    FLUFFY CARROT CAKE BARS - INGREDIENTS1 box Simple Mills Banana Bread Mix2 medium carrots, grated3/4 cup raisins1/2 teaspoon cinnamon2 tablespoons oil (I recommend avocado oil)1/2 cup water3 eggs1/4 cup unsweetened shredded coconut3/4 container vanilla or cream cheese frosting of choice

    FLUFFY CARROT CAKE BARS

    Ingredients

    • 1 box Simple Mills Banana Bread Mix
    • 2 medium carrots, grated
    • ¾ cup raisins
    • ½ tsp cinnamon
    • 2 tbsp oil (I recommend avocado oil)
    • ½ cup water
    • 3 eggs
    • ¼ cup unsweetened shredded coconut
    • ¾ container vanilla or cream cheese frosting of choice

    Instructions 

    1. Preheat oven to 325. 
    2. Line and 8×8 baking dish with parchment paper or just grease well. 
    3. In a large mixing bowl, whisk together the oil, water and eggs. once smooth, add the banana bread mix, carrots, raisins, and cinnamon. 
    4. Transfer from mixing bowl to the baking dish. 
    5. Use a spatula to make sure the batter is even. 
    6. Bake for 23-24 minutes (until a toothpick comes out clean). 
    7. Let cool completely before frosting—this is important. 
    8. Frost the cake and evenly distributed the shredded coconut. 
    9. Cut into 12 bars. 
    10. Enjoy!
