GRAIN FREE LEMON BLUEBERRY CHOCOLATE CHIP MUFFINS - INGREDIENTS 1/4 cup melted ghee, butter or coconut oil6 eggs1/2 cup full fat coconut milk1/4 cup honey2 tsp vanilla2 tb lemon juice2/3 cup coconut flour1 scoop Vital Proteins Collagen Peptides1 tsp baking powder2 tsp cinnamon1/2 tsp salt1 tsp lemon zest1 cup fresh blueberries1/3 cup dairy free chocolate chips (optional)

Ingredients

  • ¼ cup melted ghee, butter or coconut oil
  • 6 eggs
  • ½ cup full fat coconut milk
  • ¼ cup honey
  • 2 tsp vanilla
  • 2 tbsp lemon juice
  • cup coconut flour
  • 1 scoop Vital Proteins Collagen Peptides
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 1 tsp lemon zest
  • 1 cup fresh blueberries
  • cup dairy free chocolate chips (optional)

Instructions

  • Preheat oven to 375.
  • Line a muffin pan with 12 liners.
  • In a medium bowl, whisk together the eggs, ghee/butter, coconut milk, honey, lemon zest, and lemon juice.
  • In another bowl, mix together the coconut flour, collagen, baking powder, cinnamon, and salt. Pour the dry ingredients into the wet, and stir together, folding in the blueberries last.
  • Sprinkle chocolate chips on top.
  • Bake for 28-30 minutes.
