With only three ingredients and four steps, this is quite possibly one of my easiest recipes ever, and doesn’t skimp out on the flavor. If you’re looking for something quick, easy, and packed with protein- oh, and not to mention, that’s also gluten-free and refined sugar-free, then you’ve come to the right place. Prepare to have your mind absolutely BLOWN.

    One of my favorite desserts during the holidays is peppermint bark, so much so, that I love to make different variations of bark throughout the year. From my Dark Chocolate Almond Bark to now my Honey Granola Protein Yogurt Bark, bark is such a great way to satisfy your sweet tooth. I love keeping a bag of bark in my fridge at all-times, so that I always have something sweet and delicious on-hand.

    But this bark recipe is extra-special, because it only requires three ingredients- that’s it!! When I say that this recipe is super easy to whip up in a pinch, I truly mean it. All you need is some greek yogurt, honey, and collagen peptides to make this delicious recipe.

    What is Bark?

    In simple terms, bark is usually a sheet of chocolate, that’s loaded with different toppings and broken up into irregular-shaped bits. As I mentioned, the most well-known bark is peppermint bark, which usually has a dark chocolate base, white chocolate on top, and crushed candy cane bits embedded in it – YUM.

    Making bark is super simple, and the most fun part about it is breaking it up at the end. If you really want to have fun with it (and let out some steam) I recommend smashing it with a rolling pin instead of breaking it by hand.

    What You Need to Make This Honey Granola Protein Yogurt Bark

    Like I mentioned above, all you need are three simple ingredients to make this recipe. That is IT! You can and may choose to add additional ingredients in the form of toppings, but that’s up to you. This recipe is great as-is.

    • Greek Yogurt: I love greek yogurt because it’s high in protein, and gentler on the tummy. If you’re dairy-free, you can try swapping out the greek yogurt for coconut yogurt, however fair warning: this recipe hasn’t been tested with it, so it may not turn out the same.
    • Honey: I like using a raw, local honey; not only is it better / more sustainable for the bees, but local honey has been shown to be beneficial to your immune system!
    • Collagen Peptides: If you’ve been here before, then you probably know already that I love collagen. It’s full of protein, great for your hair, skin, and nails, and doesn’t add any weird flavor or texture.
    • Granola: I love granola, and it adds a lot of crunch and texture. You can use any granola you’d like, including the Grain-Free Tahini Chocolate Chunk Granola – it’s amazing!
    • Chia seeds: Chia seeds are high in omega-3 fatty acids, fiber, and can help control blood sugar levels. And I love the extra crunch and texture they add to this recipe. You can use white chia seeds or black chia seeds, it doesn’t matter.
    • Additional Toppings (optional): Some additional toppings that I love are crushed nuts, hemp seeds, dried fruit, and/or extra honey. Don’t be afraid to get creative with it!

    How to Make this Honey Granola Protein Yogurt Bark

    1. Mix the yogurt, collagen, and honey together in a small bowl.
    2. Line a baking sheet with parchment paper and pour the mixture over the top, being sure to spread it out evenly. Add your toppings to the top, if desired.
    3. Freeze for a minimum of 8 hours or overnight, until solid.
    4. Using your hands or a rolling pin, break the bark into smaller pieces.

    Storing Your Honey Granola Protein Yogurt Bark

    This bark is best kept (and consumed) cold, or fridge-temperature. You can keep your bark in a bag or air-tight container in the fridge, for up to one week, or in the freezer for up to one month.

    Since we are using greek yogurt, it’s important to make sure that it’s kept cold!

    Ingredients

    • 3 Cups Plain Greek Yogurt
    • ½ Cup Raw Honey
    • 3 Scoops Unflavored Collagen Peptides
    • ¾ Cup Granola
    • ½ Cup Chia Seeds

    Instructions 

    1. Mix the yogurt, collagen, and honey together in a small bowl.
    2. Line a baking sheet with parchment paper and pour the mixture over the top, being sure to spread it out evenly.
    3. Spread your granola and chia seeds evenly over the yogurt, as well as any other toppings you are using.
    4. Freeze for a minimum of 8 hours or overnight, until solid.
    5. Using your hands or a rolling pin, break the bark into smaller pieces.

      I used unsweetened coconut milk yogurt and vanilla protein powder and this was absolutely amazing!! Such a great basic recipe, I cannot wait to make different varieties!!
