Light & Refreshing Watermelon Matcha

One of my favorite drinks these days that truly tastes like summertime in a glass is my Light & Refreshing Watermelon Matcha.It's everything that you know and love about a matcha latte, mixed with freshly blended watermelon for a drink that is crisp, refreshing, and perfect for keeping you cool in the summer heat.

    Summer days may be coming to an end, but that doesn’t mean that the refreshing summertime recipes have to! One of my favorite drinks these days that truly tastes like summertime in a glass is my Light & Refreshing Watermelon Matcha. It’s everything that you know and love about a matcha latte, mixed with freshly blended watermelon for a drink that is crisp, refreshing, and perfect for keeping you cool in the warm summer heat.

    Friends, if you follow me on Instagram, then you may know that I am obsessed with matcha these days. Lately, I’ve been replacing my morning coffee with my morning matcha latte instead, and it has truly been a game changer. If you’re new to the world of matcha, then you may not know that this delicious (and trendy) drink is full of benefits. It’s loaded with antioxidants, and while it has caffeine, it releases into the body slower than coffee does, which means you get a longer, more sustained energy, rather than a quick energetic burst.

    So, when I saw my friends @glowwithella and @shaynateresetaylor post a recipe for a fresh watermelon matcha, I knew immediately that I needed to try it. And, lo and behold, it was AMAZING. The combination of fresh watermelon and slightly bitter matcha is truly underrated. Plus, it’s the perfect way to use up some of your leftover summer watermelon!

    From shaved Ice to salads, I cannot get enough of watermelon during this time of year. It’s hydrating, refreshing, and perfectly sweet. Truly, what could be better than that?!

    To make this matcha latte, you will need a watermelon, matcha, vanilla extract, honey, lemon juice, ice, and milk.

    Start by scooping out a 1/2 of a watermelon and place it into a blender. Then, blend until it’s smooth.

    5 Ingredients Needed to Make This Summertime Matcha Recipe

    All you need are 5 (optionally 6!) easy ingredients in order to make this matcha recipe. It couldn’t be any easier than that!

    • Watermelon: What makes this matcha recipe so special is its use of fresh watermelon! You’ll need approximately a 1/2 of a watermelon to make this recipe. You can also use frozen watermelon pieces, if you’d prefer!
    • Matcha: Of course, it wouldn’t be a matcha latte without the matcha! My favorite matcha is by Pique, and you can use code KALEJUNKIE for 15% off!

    Next, strain out the liquid from the watermelon and discard any remaining seeds or chunks of fruit.
    • Vanilla Extract: A touch of vanilla extract helps to perk up this matcha recipe. Don’t knock it until you try it!
    • Honey: Honey and matcha are the perfect combination and ensures that this matcha turns out sweet and delicious.
    • Lemon Juice: This is optional but a squeeze of lemon juice adds just the right amount of brightness to this matcha recipe.
    • Ice: A handful of ice ensures that this recipe stays cool and refreshing.
    • Milk of Choice: This is optional, but I love to top this matcha off with just a splash of milk! Any milk works well for this recipe, so pick your favorite and go to town.

    Then, prepare the matcha by adding the matcha powder, water, honey, and vanilla extract to a glass and use an electric whisk to whisk the matcha together until fully combined.

    How to Make This Light & Refreshing Morning Matcha

    To make this matcha, start by cutting the watermelon into chunks, being sure to remove the rind. Add the watermelon pieces to a blender, then blend until the watermelon is smooth and pureed. Once the watermelon is blended, place a strainer on top of a large mason jar and strain out the seeds and remaining chunks of watermelon, so that all that is left is smooth liquid.

    Then, add a handful of ice to a tall glass and pour about half of the watermelon mixture in. Store the remaining watermelon in the fridge. Add the matcha powder to a separate glass and pour hot water into the glass, until the matcha powder is covered. Using a whisk, whisk the matcha and water together until all of the powder is dissolved. Then, add in the vanilla extract and honey and whisk again until they are fully combined with the matcha.

    Finally, pour the matcha into the glass with the watermelon and stir until fully combined. Top with milk, if desired, then serve and enjoy! This recipe makes enough for one drink.

    Ingredients

    • ½ Watermelon
    • 1 Serving Matcha
    • 1 Teaspoon Vanilla Extract
    • 1 Tablespoon Honey
    • 1 Tablespoon Lemon Juice
    • 1 Handful Ice
    • Milk of choice, Optional but highly recommended!

    Instructions
