I LIVE for one pan meals! And most of the time I don’t follow recipes, I just toss what I’ve got in a pan, play with different seasonings, and call it a day—this one you see here is a WINNER! I think I’ll call it ONE PAN CREAMY SAUSAGE PASTA that I made in under 30 minutes using no cream despite the name of this dish.

    Ingredients

    • 1 package True Story Foods Organic Chicken sausage
    • 1 5oz can coconut cream (this is the thick white part, not the liquidy part)
    • 16 oz marinara sauce of choice
    • 2 cloves garlic, crushed
    • ½ onion, finely diced
    • 1 red pepper, finely diced
    • 1 package pasta of choice (I used one box of Banza chickpea pasta)
    • ⅓ cup finely chopped basil
    • ½ cup parmesan cheese (optional, omit if dairy free!)
    • 2 tbsp oil of choice (I used avocado oil)
    • 1 tbsp Italian seasoning
    • salt, pepper, to taste

    Instructions

    1. Dice the onion and red pepper and set aside.
    2. Slice sausage into coins about 1/2 inch thick.
    3. Place a large pan on the stove over medium heat—add the avocado oil.
    4. Once pan is hot, add the onion and bell pepper.
    5. After about five minutes, add crushed garlic, Italian seasoning, sausage, and a pinch of salt and pepper.
    6. Stir everything well, and after another few minutes, add the marinara sauce, three cups water and the pasta.
    7. Bring to a boil, then cover and reduce heat to low, and let cook for 15 minutes.
    8. Then remove the cover and mix in the coconut cream and basil.
    9. If using parmesan cheese, sprinkle as much as you want on top and plate your meal! That’s it!!! SOOOO GOOOOOD

I enjoyed the flavors here! I used ground sausage instead of the links or coins, because it was what I had on hand. Easy to make and my husband enjoyed every bite!
