    ONE POT SPINACH ARTICHOKE SAUSAGE PASTA - INGREDIENTS1 package pasta of choice (I used linguine)1 package sausage of choice (I used True Story Foods Siracha Jalapeño Chicken), sliced into 1/2 inch pieces1 12oz jar marinated artichoke hearts, drained2 tb Lucini Italia olive oil1 bunch organic spinach1 tsp sea salt1 tsp black pepper4 1/4 cups water1/2 cup shredded parmesan cheese (optional)1 bunch chives, chopped (optional)

    Today I’m sharing a one-pot pasta that’s SO good and SO easy, you don’t even have to strain the pasta water—LAZY GIRLS UNITE! You literally just dump the ingredients into the pot and it’s done in about ten minutes and you end up with a masterpiece that looks like it came out of Bon Apetit mag. Here is my ONE POT SPINACH ARTICHOKE SAUSAGE PASTA, a recipe I adapted from one I found on @thekitchn.

    ONE POT SPINACH ARTICHOKE SAUSAGE PASTA

    Ingredients

    • 1 package pasta of choice (I used linguine)
    • 1 package sausage of choice (I used True Story Foods Siracha Jalapeño Chicken), sliced into 1/2 inch pieces
    • 1 12 oz jar marinated artichoke hearts, drained
    • 2 tbsp Lucini Italia olive oil
    • 1 bunch organic spinach
    • 1 tsp sea salt
    • 1 tsp black pepper
    • 4 ¼ cups water
    • ½ cup shredded parmesan cheese (optional)
    • 1 bunch chives, chopped (optional)

    Instructions 

    1. In a large pot, add the pasta, sausage, artichoke hearts, olive oil, spinach, sea salt, pepper, and water.
    2. Bring to a boil, using tongs to mix everything together make sure the pasta doesn't stick together
    3. Once it comes to a boil, reduce heat to low and cover.
    4. Let cook over low heat for 8-9 minutes.
    5. Once done, add the chives and sprinkle parmesan cheese on top.
    6. Adjust seasonings to taste!
