            Ingredients
- 1 ½ cups drained and rinsed quinoa
 - 2 ¼ cups vegetable broth
 - 1 onion, diced
 - 2 cloves garlic, mashed
 - 3 tbsp olive oil
 - 3 tbsp tomato paste
 - 1 can black beans, drained
 - ½ packet or 3 tablespoons Taco Seasoning (I used the packet from Trader Joe’s)
 - salt & pepper to taste
 - vegan queso (I used Zubi’s)
 - 1 lime, quartered
 
Instructions
- In a large pot, add olive oil over medium heat.
 - Add onion and mashed garlic.
 - Stir for a few minutes, until the onion starts to soften. add tomato paste and quinoa and stir for another minute. Add black beans and veggie broth.
 - Bring to a gentle boil, then cover and reduce heat to low.
 - Set timer for 20 minutes.
 - Turn heat off and fluff the quinoa.
 - Squeeze lime over the quinoa.
 - Serve and add toppings of choice.
