Friends, if you are looking for the easiest sweet treat to whip up on the days where you don’t want to leave the house, then you are going to love this Viral Cookie Dough Bark. As soon as I saw this recipe come across my social feed, I knew that I needed to make it. After all, I am a HUGE fan of all-things cookie dough. And, I also happen to be a huge fan of a mid-afternoon sweet treat. This bark comes together with just a few minutes of prep time, and one hour in the freezer, making it the perfect sweet treat to throw together in a pinch.

My twist on this Cookie Dough Bark also happens to be naturally gluten-free and vegan-friendly, and reminds me of my Life Changing Tahini Chocolate Chip Cookies… minus the tahini. Of course, if you want the tahini flavor, you could always add in a few tablespoons to the dough to give it that perfect salty-sweet twist. However, this recipe is perfect as-is. The touch of maple syrup and vanilla extract makes the bark sweet, while the finishing touch of flaky salt helps to balance out the flavors. If you’re someone who loves a salty-sweet treat like I do, then you will love this recipe.

Plus, it’s perfect for prepping-ahead and keeping in the freezer, for whenever the sweet treat craving strikes. Simply prepare the bark as instructed and, once it’s solid, break it into pieces. Transfer the pieces to an airtight container and store them in the freezer. It should stay good for up to one month, though I doubt it will last that long before you eat it all. 😉 It’s that good!

The Six Ingredients You’ll Need to Make This Bark

One of the best parts about this bark? It comes together with only six easy ingredients, which means that it’s perfect for whipping up in a pinch. Anytime that you find yourself craving a sweet, low-sugar treat, this is the perfect recipe for you to reach for!

  • Almond Flour: This Cookie Dough Bark is naturally gluten-free, thanks to the almond flour! I love almond flour because it’s soft and fine, and is also full of healthy fats and plant-based protein.
  • Maple Syrup: A touch of maple syrup makes this bark sweet without packing it full of refined sugars.
  • Coconut Oil: I recommend using refined coconut oil in this recipe, so that it doesn’t take on a strong coconut flavor. You can use unrefined coconut oil, but it will give this bark a more coconut flavor.
  • Vanilla Extract: A touch of vanilla extract adds the perfect flavor to this bark and truly makes it taste like cookie dough.
  • Chocolate Chips: Of course, this wouldn’t be a chocolate chip cookie dough bark without the chocolate chips! Pick your favorite chocolate chips and use them in this recipe. Whether you’re reaching for dark chocolate or milk chocolate, vegan or non-vegan chips, any type of chocolate chips will work well here!
  • Sea Salt: A pinch of flaky sea salt (aka Maldon Salt) is the perfect finishing touch to this bark! It gives the bark the perfect sweet and salty flavor that is truly unbeatable.

Next, line a baking sheet with parchment paper and add the cookie dough to it. Use your hands to spread it out into an even layer.

To make this Cookie Dough Bark, start by adding the almond flour, maple syrup, coconut oil, and vanilla extract to a large bowl. Mix to fully combine.

Then, add in 3/4 cup of the chocolate chips and mix to combine. The mixture will be crumbly at first, and that is okay! Next, line a baking sheet with parchment paper and transfer the cookie dough to it. Press the cookie dough out into an even layer.

Next, melt remaining chocolate chips. Add the chocolate chips to a small bowl and microwave them in 2-3, 30 second increments until they’re melted. Pour the melted chocolate over the cookie dough mixture, into one even layer. Sprinkle the flaky sea salt on top (if using) and transfer the cookie dough bark into the freezer.
