    Friends, if there’s one food trend that I love, it’s the high-protein trend. While I don’t count calories or macros (or share them on the blog; if you want to know why, you can read about it here), I do watch my protein intake because protein is what keeps you feeling fuller, longer. Not to mention, it also helps you build muscle, which is always exciting!

    So, when I saw the recipe for this high-protein Cottage Cheese Flatbread floating around Instagram, I knew that I needed to try it. As the weather starts to warm up, I love making sandwiches and wraps to take on-the-go and enjoy in the sunshine. And this flatbread is the perfect base for all of your summertime sandwiches and wraps. See below for a few of my favorite filling ideas – I know you’re going to love them!

    Add all of the ingredients into a food processor or blender – the cottage cheese, eggs, parmesan cheese, garlic, and Italian seasoning – and process or blend until smooth.

    The 5 Ingredients You’ll Need to Make This Flatbread

    • Cottage Cheese: Of course, the key to making this Cottage Cheese Flatbread is… cottage cheese! Cottage cheese is perfectly creamy and packed with protein, and is the perfect base for this flatbread. I highly recommend using the Good Culture cottage cheese – it’s my favorite!
    • Eggs: Eggs help to hold this flatbread together, and ensure that it gets nice and fluffy.
    • Parmesan Cheese: A touch of parmesan cheese adds a delicious, salty flavor and just the right amount of cheesy-ness.
    • Garlic: I always recommend using fresh garlic, whenever possible. The flavor is truly unbeatable!
    • Italian Seasoning: A pinch of Italian seasoning adds the best flavor to this flatbread.

    How to Make This Protein-Packed Flatbread Recipe

    To make this flatbread, start by preheating your oven to 350 F. Next, line a baking sheet with parchment paper and set it aside. Then, add all of the ingredients into a food processor or blender – the cottage cheese, eggs, parmesan cheese, garlic, and Italian seasoning – and process or blend until smooth. This should take approximately 45 seconds to 1 minute.

    Once the batter has formed, transfer it to the parchment-lined baking sheet and use a rubber spatula to spread it out into a thin layer. Transfer the tray to the oven and allow it to bake for 30-35 minutes, or until the top has set and browned.

    Once it’s done, remove it from the oven and allow the flatbread to cool completely before removing it from the parchment paper. Finally, fill with your favorite toppings or ingredients, then serve and enjoy!

In fact, this flatbread is perfect for pairing with any of your favorite salad recipes, to turn it into a delicious wrap!

    And if you don’t want to make a salad wrap, here are some other easy ideas of how to fill this high-protein flatbread:

    • BBQ Chicken Sandwich: I love a BBQ chicken sandwich, and this wrap is perfect for it. Brush the flatbread with BBQ sauce, then top with cooked shredded chicken breast and shredded mozzarella cheese. Then, transfer it to the oven and allow it to bake for a few minutes, until the cheese is melted and bubbly. Once it’s done, allow it to cool slightly, then roll it up and enjoy!
    • Caprese Sandwich: To make a delicious, vegetarian-friendly Caprese sandwich, simply brush the flatbread with olive oil, then top it with slices of mozzarella cheese, tomato, and fresh chopped basil. Finish with a sprinkle of sea salt and ground black pepper, then roll it up and enjoy!
    • Egg Salad Sandwich: My One Bowl Healthy Egg Salad is a delicious filling for this wrap! Plus, it’s packed with even more protein, which will help keep you feeling fuller, longer.

    Q: Can I make this recipe in an air fryer or toaster oven?

    Yes, you can! Simply heat the air fryer or toaster oven to 350 F. You will likely have to adjust the cook time, however, so be sure to watch it carefully. I recommend cooking it in 10 minute increments, to ensure that it doesn’t burn.

      Quite delicious! Need to cook for less than 30 minutes in my oven though, as it browned a bit more than anticipated. I would also like to know how long this can be stored for, to maybe be used in meal prep.

      Does it have to be full fat cottage cheese? My guess is it will be too wet if low fat or fat free.

      Can you tell me what size of baking sheet you are using? I have three sizes from large jelly roll size to a what I believe they call a quarter sheet. Can you tell the measurements of the one you use. I am very excited to make this for my granddaughters this next week. Thank you

      Every time I make this it always come out too wet. I spray the parchment with PAM. Could that be the problem? It always tastes great but never hold together due to being too wet. Ive even put it on new parchment after it completely cools and pat dry with paper towels.

        Hi Robin! A few ideas/suggestions: no need to use PAM; that could possibly be an issue. It must be full fat cottage cheese, preferably Good Culture brand. Let me know if any of that is helpful!
