Start by chopping your apples into thin slices.
Next, add them to a small saucepan, on the stove, over low heat, and add in the rest of the apple syrup ingredients: the apple juice, brown sugar, water, vanilla extract, apple pie spice, and cinnamon stick.
Stir your apple mixture and bring to a gentle boil.
Cover it and let it simmer for approximately 15 minutes, until the syrup starts to thicken.
Then, remove it from the heat.
Remove the apple slices and cinnamon stick and set them to the side, being sure to save the apple slices for garnishing!
Finally, pour your syrup into a mason jar, let cool, then store it in the fridge until you’re ready to make your cold brew lattes, for up to one week.
Once you’re ready to assemble the latte, add 2-3 tablespoons of your apple crisp syrup to a glass, along with your ice cubes, cold brew coffee, and milk of choice.
Stir, then topped with the stewed apple slices and a dash of cinnamon, and enjoy!
