- 3 Avocados
- 2 Roma Tomatoes
- ½ Red Onion
- ½ English Cucumber
- ½ Bunch Italian Parsley this is about 3/4 cup
- 1 Cup Feta Cheese crumbled; or substitute a dairy-free feta alternative
- ⅓ Cup Extra Virgin Olive Oil
- ⅓ Cup Red Wine Vinegar
- 1-2 Cloves Garlic mashed
- Sea Salt & Black Pepper to taste
- Tortilla Chips for serving
Start by washing and chopping all of your veggies - the avocado, tomato, red onion, english cucumber, and Italian parsley - then, add your chopped veggies to a large bowl.
Next, using a fork or your hands, crumble your feta cheese and add it to the bowl with the veggies.
Then, add in the olive oil, red wine vinegar, garlic, sea salt, and pepper and toss to fully combine. If you desire a creamier consistency, you can use a fork to gently mash the ingredients together.
Once your dip has come together, serve it with tortilla chips and enjoy! Store any leftovers in the fridge for up to three days.
