Friends, can you believe that we are almost at the end of summer?! I don’t know about you, but it truly feels like this summer just flew by. As we approach the fall months, I am taking all of the time that I can to soak up those delicious, refreshing summer recipes, including this one!

This creamy, delicious dip has become one of my favorite recipes this summer, and is perfect to enjoy outside, on a warm summer day. It’s creamy thanks to the avocado, a little tangy thanks to the tomatoes and red onion, and the perfect amount of fatty and salty thanks to the feta cheese. And when paired with salty corn tortilla chips? It’s to-die-for. Trust me when I say that it will become your new favorite recipe, too!

Feta-based dips have definitely been trending this summer. Whether you’re making my Avocado Feta dip, or my Strawberry Tomato Whipped Feta Dip, you can’t go wrong when it comes to feta dip! And if you’re vegan and/or dairy-free, simply swap out the feta for a dairy-free alternative. It’s as simple and easy as that!

What You Need to Make This Delicious Feta-Based Dip

All you need are a few simple and easy ingredients to bring this delicious, creamy dip to life!

  • Avocados: Of course, you need avocados to make this Avocado Feta Dip! I love avocados because they’re not only soft and delicious, but they are also loaded with healthy fats.
  • Roma Tomatoes: Roma tomatoes add the perfect texture to this dip, and just the right amount of acidity to cut through the fatty avocado and feta cheese!
  • Red Onion: Diced red onion is essential in any salsa / dip recipe. Don’t skip this!
  • English Cucumber: English cucumber adds a delicious and refreshing “crunch” to this dip.
  • Italian Parsley: Any good dip recipe needs an herbaceous element, and for this dip, we’re going with Italian parsley.
  • Feta Cheese: Of course, the second star of this dip is the feta cheese! You can use traditional feta cheese, or swap it out for a vegan feta-alternative to keep this dip dairy-free!
  • Olive Oil: A touch of olive oil helps to bring this dip together- and, not to mention, also adds in some heart healthy fats!
  • Red Wine Vinegar: I always keep a bottle of red wine vinegar on-hand in my pantry, because it’s inexpensive and packs a nice tangy flavor.
  • Garlic: Fresh garlic cloves are essential to this dip, and add the best flavor.
  • Sea Salt & Pepper: A bit of sea salt and black pepper adds the perfect finishing touch!
  • Tortilla Chips: This is the best part – pick your favorite tortilla chips and serve them with this delicious dip!

How to Make This Simple & Easy Summertime Dip

Making this dip truly couldn’t be any easier! Simply start by washing and chopping all of your vegetables, and add them to a large bowl.

Next, crumble your feta using your hands or a fork, and add it to the bowl along with the olive oil, red wine vinegar, garlic, salt, and pepper.

Toss the ingredients together using a spoon, or use a fork to gently mash it together if you like a creamier, more smooth texture. Once your dip is done, serve it with your favorite tortilla chips, and enjoy! You can store any leftovers in the fridge for up to three days.

Ingredients

  • 3 Avocados
  • 2 Roma Tomatoes
  • ½ Red Onion
  • ½ English Cucumber
  • ½ Bunch Italian Parsley this is about 3/4 cup
  • 1 Cup Feta Cheese crumbled; or substitute a dairy-free feta alternative
  • Cup Extra Virgin Olive Oil
  • Cup Red Wine Vinegar
  • 1-2 Cloves Garlic mashed
  • Sea Salt & Black Pepper to taste
  • Tortilla Chips for serving

Instructions

  • Start by washing and chopping all of your veggies – the avocado, tomato, red onion, english cucumber, and Italian parsley – then, add your chopped veggies to a large bowl.
  • Next, using a fork or your hands, crumble your feta cheese and add it to the bowl with the veggies.
  • Then, add in the olive oil, red wine vinegar, garlic, sea salt, and pepper and toss to fully combine. If you desire a creamier consistency, you can use a fork to gently mash the ingredients together.
  • Once your dip has come together, serve it with tortilla chips and enjoy! Store any leftovers in the fridge for up to three days.
