CHEWY CHOCOLATE CHIP BIRTHDAY COOKIES

Ingredients

  • ¼ cup + 1 tablespoon gluten free flour (I use Bob’s Red Mill)⁣⁣
  • ¼ cup maple syrup
  • 1 cup creamy peanut butter⁣⁣ (make sure it’s liquidy)
  • ¼ cup coconut oil, melted
  • 1 large egg⁣⁣
  • ¼ cup natural sprinkles⁣⁣
  • ¾ cup chocolate chips⁣⁣
  • 1 tsp baking powder⁣⁣
  • ½ tsp sea salt⁣⁣

Instructions

  • Preheat oven to 350.
  • In a medium bowl, whisk together the flour, maple syrup, peanut butter, melted coconut oil, vanilla extract, and the egg. Next add the sprinkles, chocolate chips, baking powder, and sea salt.
  • Do not over mix the batter.
  • Then, using a cookie scoop, form 12-14 bites.
  • Bake for 8-9 minutes (they will look soft still).
  • Remove from oven, try to let cool even though—I know you won’t, I didn’t!
