In a medium bowl, whisk together the flour, maple syrup, peanut butter, melted coconut oil, vanilla extract, and the egg. Next add the sprinkles, chocolate chips, baking powder, and sea salt.
Do not over mix the batter.
Then, using a cookie scoop, form 12-14 bites.
Bake for 8-9 minutes (they will look soft still).
Remove from oven, try to let cool even though—I know you won’t, I didn’t!
