CHEWY CHOCOLATE CHIP BIRTHDAY COOKIES - INGREDIENTS1/4 cup + 1 tablespoon gluten free flour (I use Bob’s Red Mill)⁣⁣1/4 cup maple syrup1 cup creamy peanut butter⁣⁣ (make sure it’s liquidy)1/4 cup coconut oil, melted1 teaspoon vanilla extract⁣⁣1 large egg⁣⁣1/4 cup natural sprinkles⁣⁣3/4 cup chocolate chips⁣⁣1 teaspoon baking powder⁣⁣1/2 teaspoon sea salt⁣⁣

Ingredients

  • 1/4 cup + 1 tablespoon gluten free flour (I use Bob’s Red Mill)⁣⁣
  • 1/4 cup maple syrup
  • 1 cup creamy peanut butter⁣⁣ (make sure it’s liquidy)
  • 1/4 cup coconut oil, melted
  • 1 large egg⁣⁣
  • 1/4 cup natural sprinkles⁣⁣
  • 3/4 cup chocolate chips⁣⁣
  • 1 tsp baking powder⁣⁣
  • 1/2 tsp sea salt⁣⁣

Instructions

  • Preheat oven to 350.
  • In a medium bowl, whisk together the flour, maple syrup, peanut butter, melted coconut oil, vanilla extract, and the egg. Next add the sprinkles, chocolate chips, baking powder, and sea salt.
  • Do not over mix the batter.
  • Then, using a cookie scoop, form 12-14 bites.
  • Bake for 8-9 minutes (they will look soft still).
  • Remove from oven, try to let cool even though—I know you won’t, I didn’t!

  1. I can’t stop making these! As someone who loves sprinkles these are the perfect balance/ratio! I love that it only requires a small number of ingredients and comes together so quickly. I’ve doubled the batch and stuck some in the freezer too. Thanks for my new favorite go to cookie recipe!
