Easy Grilled Bang Bang Corn

This Easy Grilled Bang Bang Corn combines perfectly grilled corn with a tangy Bang Bang Sauce and a sprinkle of cotija cheese for the perfect summertime treat. Serve it poolside with your favorite BBQ or enjoy it as a delicious snack, all on it's own - no matter how you choose to enjoy it, there's no wrong way!

Ingredients

For the Corn:

  • 6 Ears Corn shucked and cleaned

For the Bang Bang Sauce:

  • Cup Mayonnaise or Greek Yogurt
  • 2 Tablespoons Sriracha
  • 2 Tablespoons Rice Vinegar
  • 2 Teaspoons Coconut Aminos or Soy Sauce
  • 1 Tablespoon Honey
  • 2 Cloves Garlic mashed
  • 1 Teaspoon Ground Ginger
  • ¼ Teaspoon Crushed Red Pepper Flakes

For Garnishing:

  • Cup Cotija Cheese crumbled
  • 1 Bunch Chives chopped
  • 1 Bunch Parsley chopped

Instructions

For Grilling the Corn:

  • If you plan to prepare this corn on the grill, start by prepping the corn. Shuck and wash the corn cobs. Then, set them aside.
  • Next, set your grill to 450 F and grill the corn for 12-15 minutes, being sure to rotate it every few minutes, so that it cooks evenly.
  • While the corn is grilling, prepare the Bang Bang sauce. Add the sauce ingredients (the mayonnaise or greek yogurt, sriracha, rice vinegar, coconut aminos or soy sauce, honey, garlic, ground ginger, and crushed red pepper flakes) to a bowl and mix until fully combined.
  • Once the corn is cooked, remove it from the grill and drizzle the Bang Bang sauce on top.
  • Garnish with the chopped chives, chopped parsley, and cotija cheese, if desired. Then, serve and enjoy!

Alternative Method:

  • If you don't have access to a grill, you can prepare the corn by boiling it! To use this alternative method, start by preparing the corn, as described above.
  • Next, bring a large pot of water to a boil, on the stove.
  • Once the water is boiling, add the corn into the pot and allow it to cook for 3-5 minutes, under the corn kernels are tender and golden.
  • Once the corn is done, remove it from the water and continue the recipe as described above!
