FLUFFY BANANA CHOCOLATE CHIP PANCAKES

Ingredients

  • ¾ cup oat flour
  • 2 tbsp  cacao or cocoa powder
  • 2 tsp coconut oil
  • ¾ cup almond milk
  • 1 ripe banana
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ cup dairy free chocolate chips

Instructions

  • Grab your blender! 
  • Add all ingredients except for the chocolate chips. 
  • Blend for 30-45 seconds until just incorporated. 
  • Transfer to a bowl. 
  • Fold in the chocolate chips. 
  • Allow batter to set for about 3-4 minutes so the batter thickens slightly. 
  • Spray cooking pan with spray and spoon about two tablespoons batter, forming pancakes. 
  • I usually do 2-3 pancakes at a time so I don’t overcrowd they pan. 
  • Once the pancakes start bubbling (about 2 minutes in), flip to the other side for another minute, then transfer to a plate. 
  • Repeat until all the batter is used and add toppings!
  • Enjoy!
