GREEK SALAD FLATBREADS

Ingredients
6
gluten free flatbread rounds
4
cucumbers
diced
1
cup
tomatoes
halved
½
cup
red onion
chopped
3
tablespoons
olive oil
3
tablespoons
champagne vinegar
or red wine vinegar
Salt and pepper to taste
Feta cheese to crumble on top
Hummus
to spread on the rounds
Instructions
Preheat oven to 350.
Lay the flatbread on a baking sheet.
Toast in the oven for 4-5 minutes.
You can also pop them in the toaster instead.
Next, chop all of the vegetables and put them in a bowl, then toss with olive oil and vinegar, adding salt and pepper to taste.
Spread hummus all over the flat breads, then top with the salad mix.
Add feta cheese and enjoy!
