Ingredients

  • 6 gluten free flatbread rounds
  • 4 cucumbers diced
  • 1 cup tomatoes halved
  • ½ cup red onion chopped
  • 3 tablespoons olive oil
  • 3 tablespoons champagne vinegar or red wine vinegar
  • Salt and pepper to taste
  • Feta cheese to crumble on top
  • Hummus to spread on the rounds

Instructions

  • Preheat oven to 350.
  • Lay the flatbread on a baking sheet.
  • Toast in the oven for 4-5 minutes.
  • You can also pop them in the toaster instead.
  • Next, chop all of the vegetables and put them in a bowl, then toss with olive oil and vinegar, adding salt and pepper to taste.
  • Spread hummus all over the flat breads, then top with the salad mix.
  • Add feta cheese and enjoy!
