- Preheat oven to 350. 
- Line a loaf pan with parchment paper and set aside. 
- In a medium bowl, mash the banana well. 
- Add the egg and coconut oil, and whisk until well combined and set aside. 
- In a large bowl, mix together the almond flour, coconut sugar, baking soda, baking powder, apple pie spice (or cinnamon/nutmeg), and salt. 
- Pour wet ingredients into the bowl with the dry ingredients. 
- Fold in the carrots and the raisins. 
- Pour batter into the loaf pan and use a spatula to make even. 
- Bake for 40-45 minutes, or until a toothpick comes out clean. 
- Remove from oven and let cool completely before frosting! 
- Slice and get ready for pure bliss.
