PALEO STRAWBERRY FIG NEWTON BARS

Ingredients

FOR THE CRUST:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • 3 tbsp maple syrup or coconut sugar
  • ½ cup apple sauce
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • pinch sea salt

FOR THE FILLING:

  • 1 ½ cups dried figs
  • 1 cup fresh strawberries
  • juice of 1/2 lemon or orange
  • ½ tsp cinnamon
  • 2 tbsp chia seeds (optional)

Instructions

  • Preheat oven to 350.
  • Line an 8x8 baking dish with parchment paper (spray inside with oil first so that the parchment paper sticks). In a food processor or high speed blender, add the filling mixture and pulse/blend until you have a jam-like consistency.
  • Next, add the crust ingredients to a medium size bowl and mix well.
  • Place half the mixture into the baking dish and use a spatula to press down evenly.
  • Pour the filling mixture in and spread evenly.
  • Top with remaining crust mixture.
  • Then sprinkle a little cinnamon on top!
  • Bake for 30 minutes.
  • Let cool completely and cut into 12 squares.
  • Store in the fridge.
