CARROT CAKE OATMEAL

Ingredients
1
large carrot, grated
½
tsp
cinnamon
1 ½
cup
quick cook steel cut oats
2
cup
almond milk (or water)
½
cup
raisins
3
tbsp
maple syrup
¼
cup
chopped walnuts
Optional:
nut butter of choice (I used
Kween and CO vanilla Granola Butter
)
Instructions
Grate carrot and set aside.
In a medium pot over low heat, add the oats and the almond milk/water.
Bring to a gentle boil.
Add carrot, raisins, and maple syrup.
Turn heat to low and cover for 5-7 minutes.
Remove from heat and top with walnuts, and any additional toppings!
