there is an updated version of this on Nicole’s instagram that is TO DIE FOR! The updated recipe calls for one cup of cauli rice to bolster it (this girl loves a good bolstering + extra veggies to start the day!) and a few other slight modifications and I made it this morning trying to get my bf out the door for work. It comes together so quick and is honestly maybe the best oatmeal recipe I’ve ever followed. I had all ingredients on hand except the raisins and will surely finish off the box of raisins repeating this recipe all spring!

    • Hi Katie, thank you so much for this review! I am so beyond thrilled that you love my carrot cake cauliflower oats, and I’m also thrilled to tell you that the updated recipe is coming to the blog soon! I am honored that this is your favorite oatmeal recipe, and I’m so grateful for your support!
