Carrot Cake Oatmeal

CARROT CAKE OATMEAL - INGREDIENTS1 large carrot, grated1/2 teaspoon cinnamon1 1/2 cup quick cook steel cut oats2 cups almond milk (or water)1/2 cup raisins3 tablespoons maple syrup1/4 cup chopped walnutsoptional: nut butter of choice (I used Kween and CO vanilla Granola Butter)

Ingredients

  • 1 large carrot, grated
  • ½ tsp cinnamon
  • 1 ½ cup quick cook steel cut oats
  • 2 cup almond milk (or water)
  • ½ cup raisins
  • 3 tbsp maple syrup
  • ¼ cup chopped walnuts
  • Optional: nut butter of choice (I used Kween and CO vanilla Granola Butter)

Instructions

  • Grate carrot and set aside. 
  • In a medium pot over low heat, add the oats and the almond milk/water. 
  • Bring to a gentle boil. 
  • Add carrot, raisins, and maple syrup. 
  • Turn heat to low and cover for 5-7 minutes. 
  • Remove from heat and top with walnuts, and any additional toppings!

    there is an updated version of this on Nicole’s instagram that is TO DIE FOR! The updated recipe calls for one cup of cauli rice to bolster it (this girl loves a good bolstering + extra veggies to start the day!) and a few other slight modifications and I made it this morning trying to get my bf out the door for work. It comes together so quick and is honestly maybe the best oatmeal recipe I’ve ever followed. I had all ingredients on hand except the raisins and will surely finish off the box of raisins repeating this recipe all spring!
