ONE POT SPICY TOMATO AND SAUSAGE PASTA

Ingredients

  • 1 package True Story Foods Organic Spicy Chicken Sausage (or sausage or choice)
  • 1 box chickpea pasta (or pasta of choice)
  • 1 14.5 oz can fire roasted diced tomatoes
  • 1 cup basil, roughly torn apart
  • 1 bulb fennel, thinly sliced (optional)
  • 2 cloves garlic, mashed 
  • 2 tbsp olive oil 
  • 1 tsp sea salt 
  • pinch black pepper 
  • 4 ½ cups water (I used Bonafide Provisions Chicken Bone Broth)

Instructions

  • Add all of the ingredients to a big pot and place on the stove and stir together (I used a 3.5 quart Le Creuset).
  • Bring to a soft boil. 
  • Once boiling, reduce heat to low, and cover for 9-11 minutes. 
  • At the half way point, remove cover and stir so the pasta doesn’t stick together. 
  • Replace cover and remove from heat and enjoy!
